Tuna Casserole

Ingredients
- 8 oz penne rigate, cooked
- 4 T butter
- 6 T flour
- 2 C milk, warmed
- 1 C heavy cream, warmed
- 4 oz sour cream
- 3 oz goat cheese
- 2 cans albacore tuna in water, drained
- 2 C cheddar cheese, grated
- Options: sauteed mushrooms, peas, broccoli
Instructions
- Melt the butter in a saucepan, then whisk in the flour to incorporate. Slowly whisk in the milk to form a sauce, then add the cream, sour cream and goat cheese. Season to taste, then remove from heat.
- Mix in the tuna, pasta, 1 C cheese, and options. Pour into a buttered casserole dish. Top with the remaining cheese and bake at 350 for 30 minutes.
- Plate and serve hot.
